I was making the hubby some green chile chicken enchiladas when I realized I had enough left to put in a round cake pan. Hmm, who would love some of my green chile chicken enchiladas I thought. I knew instantly my son would love some of mom’s popular enchiladas after a long day at work. I had never cooked a small batch before so I timed it just right so it would be done in time. I grabbed a box of Rice a Roni Spanish Rice I got for free and decided I would see if Food City had the S&W Mexican Stewed tomatoes to use versus what the box called for as it adds more flavor and my Fry’s doesn’t it carry it anymore. I got everything ready, picked him up and found he wasn’t sure if he had butter or not for the rice. Ugh, I had tons of it at home but didn’t want to drive back so we picked up some along with the stewed tomatoes. Needless to say we didn’t chat as much as usual once I got to his house. He was so anxious to cook his rice and beans to go with the enchiladas I made just for him. Whether your man is your hubby, young adult son or an adventurous toddler, food is the key to his heart. Nothing says you love them like their favorite meal.
Oh, yes the photo looks a little saucy but I slow cooked it in the oven and it was perfect. I didn’t want to take the cover off to take another photo so it’s a pre-cooked pic.


In our house the hubby and I are late eaters since the kids are officially adults and on their own. Probably didn’t help that we also ate late due to our old work schedule but old habits die hard. It’s rare these days that we eat healthy freshly made food but when we do the house smells absolutely glorious.
