I was making the hubby some green chile chicken enchiladas when I realized I had enough left to put in a round cake pan. Hmm, who would love some of my green chile chicken enchiladas I thought. I knew instantly my son would love some of mom’s popular enchiladas after a long day at work. I had never cooked a small batch before so I timed it just right so it would be done in time. I grabbed a box of Rice a Roni Spanish Rice I got for free and decided I would see if Food City had the S&W Mexican Stewed tomatoes to use versus what the box called for as it adds more flavor and my Fry’s doesn’t it carry it anymore. I got everything ready, picked him up and found he wasn’t sure if he had butter or not for the rice. Ugh, I had tons of it at home but didn’t want to drive back so we picked up some along with the stewed tomatoes. Needless to say we didn’t chat as much as usual once I got to his house. He was so anxious to cook his rice and beans to go with the enchiladas I made just for him. Whether your man is your hubby, young adult son or an adventurous toddler, food is the key to his heart. Nothing says you love them like their favorite meal.

Oh, yes the photo looks a little saucy but I slow cooked it in the oven and it was perfect. I didn’t want to take the cover off to take another photo so it’s a pre-cooked pic.

Santa Paula Spices From .99 Only Stores

Are you still paying over a $1 for your spices?

Then you need to stop by your local .99 Only store and try their Santa Paula spices, they are great! I started out with Ground Pepper because how could anyone get that wrong, right. I was amazed at fresh the pepper was and how cheap it cost. If you can get it cheaper than $0.99 then go for it but is the quality the same? I highly recommend you try it out for the price. If you can’t tell I just came back from a spice run after getting a craving for some French Toast in the morning. Can I just say I love their Cinnamon! It beat the cheap stuff I picked up for $0.25 at CVS last year.

Store locations are currently in AZ, CA, NV and TX. I did notice on the 99 Only site you can order by case. I highly recommend emailing and see if by case you can order a mixed case of these spices if you’re not in one of the 4 states above. Oh and be sure to ask how many in a case. If it’s 12 then I’d say go for a mixed case otherwise it may be too much at once unless you want to buy with a friend or have a restaurant.

Eating Healthy for Once

roastedpotatoesIn our house the hubby and I are late eaters since the kids are officially adults and on their own. Probably didn’t help that we also ate late due to our old work schedule but old habits die hard. It’s rare these days that we eat healthy freshly made food but when we do the house smells absolutely glorious.

What’s cooking?

  • Herbed chicken in the rotisserie that hubby seasoned himself, he’s quite the chef so don’t ask what spices because there are several and I didn’t watch.
  • Roasted Red Potatoes with Thyme and Garlic this seems easy enough for me and my undomesticated ways.
  • Steamed broccoli

This is sort of a large meal for our late eating but stuff like this won’t bother my stomach issues. (I have GERD, which is short for gastroesophageal reflux disease.) Anyways, now that fall will be fast approaching I will be cooking more meals that are healthy. Nothing worse than a hot kitchen in AZ.

Monthly Freezer Cooking Fun and Info

I had a blast today with the girls and our first trial run with the whole freezer cooking thing. I thought it would be so overwhelming because well, I’m not very domesticated. Now this doesn’t mean I don’t love my hubby, but the truth is the truth. The girls made it so easy and nobody once judged the fact that I get that glazed over look when asked to measure something and I double triple quadruple check. Did I mention I’m easily distracted too? Trust me, I screwed up Stove Top one Thanksgiving because too many people were talking to me. :)

Well my fun freezer day with the gals reminded where I first heard of ‘Freezer Cooking’, and I thought I would post in case you kitchen savvy ladies wanted to give it a try or wanted more information. I first learned about it from Crystal at Money Saving Mom’s Freezer Cooking Day series. Not sure if it’s technically a series but I’m calling one and I’m sure Crystal wouldn’t mind. I’m not sure where the gals got their ideas but I just wanted to give a shout to the awesome lady, Crystal, who was the one who informed me about the topic via her blog.

Sorry I didn’t have any pictures of our first freeze fest but I promise it was fun! Lessie’s mom Annie was cute with bandana!
